Vegetarian Meal #2 - Breakfast Naan Pizza
Na Na Na Hey Hey Heyyyy Naannnn Pizzzzaaa.
Hello World,
So I am a breadophile and don't judge me but I was watching Wendy Williams, I actually like watching her cooking segments. She had on Iron Chef, Chef Cat Cora and she made a naan pizza. Chef Cat Cora on Wendy Williams . The meal looked easy and the naan itself looked absolutely DELICIOUS. Coincidentally that week I had plans to try Afghan food. After looking through the menu of the restaurant online in anticipation, I saw that they also serve naan. So it was perfect! I get to try a naan and take one home.
Fast Forward I went to the Afghanistan restaurant which was The Afghan Village Restaurant here in Houston, Texas. The naan was amazing and it came with this out of this world egg plant sauce. I thought to myself I am going to pass by here all the time to pick up a naan or two since it is just a $1 each


That never happened because when I was at Trader Joe's coincidentally again, I am telling you naan and I are meant to be. They were giving out free samples of their naan and hummus. I tried both of them and the naan was delicious, it was garlic naan and immediately snatched one. The hummus as well honestly I know so many people that rave about hummus but I always thought it was okay but that trader joe's hummus tasted so great to me and I got it. Maybe my taste buds have just improved.
So since then, naan is a staple for me. It's versatile because I can make a pizza out of it meaning putting a bunch of stuff on it and calling it pizza or I can eat it as an accompaniment to another dish. I love Naan. We are meant to be and now we are living happily ever after. So this naan pizza can obviously be customised in so many ways, whatever you have you can throw it onto as a topping.
I am going to list all the ingredients to what I used to make my breakfast naan pizza and then explain with pictures, not a video to how it all came together.
Ingredients
Stonefire Whole Grain Naan ($2.48 at HEB)

Although you get more value for your money with the trader joe's naan since there is 3 inside for $2.29 this one isn't so bad. Its only two naans inside but the naans are a little bit bigger than trader joe's naan.
Vegetable Section (Hunts Diced No Salt Added Tomatoes, 1 Red, Green, & Orange Bell Pepper, Chives, Parsley, Broccoli, Zucchini, Garlic, White Onion)




The diced tomatoes, chives, parsley, garlic, white onion I used them to make the sauce. The rest of the vegetables I chopped them up and used them as a topping raw without cooking them. I also used some of the fresh chives and parsley as toppings.

Morning Star Maple Flavoured Veggie Sausage Patty ($4.81 at HEB)

This stuff is absolutely delicious not only because I am a vegetarian. Its a good healthier option to try if you eat meat but looking for a healthier breakfast item.
Spices ( Sea Salt, Onion Powder, Black Pepper, Garlic Powder, Dried Thyme). Also Brown Sugar (not pictured)

I used these spices when making the sauce. You really don't need this much spices but for me I am a on the go cook, I add things as I go while tasting. So everything is up to your taste buds add a pinch and taste, add more if needed.

NOW LETS GET COOKING
1. Start chopping the vegetable toppings and open can diced tomato. I chopped the 1 green, 1 red, 1 orange bell pepper, zucchini, parsley, green onions, & broccoli. Also chopped the garlic & white onions (not pictured).
It might seem a lot for one pizza but I chopped this much so I can save the rest for future eating. This is the part that takes the longest unless you have pre-cut vegetables or maybe you aren't using as much veggies as I am or no veggies at all. This pizza is very customizable. (the pictures here a screenshots of a video I recorded, that is why they look wonky). Besides the veggies I used to make the sauce I didn't heat up any of the other veggies I used as a topping so I can get maximum nutrient.


2. Making the tomato sauce
To make life easier if you have some pasta sauce in your pantry, just pull it out, heat it up and voila you got your pizza sauce or you can make your own like I did and I promise its not that hard and its really delicious
A) I put a cap-full of Olive Oil in the little pot on medium heat


B) Put in the chopped White Onions and Garlic in to the heated oil. Reduced the heat to medium low so they wouldn't burn and I can get the flavours out of them.


C) Then I added some Green Onions and Parsley to the pan still on medium low heat and stirred.


D) When it comes to spices I know in general I like heating up some spices especially in a bit of oil, I feel it brings out the flavour of the spice. The spices I chose for this sauce was at random and on the go. I decided to add some spices to the heat before adding the others after adding the diced tomato. So I decided to add some Garlic Powder and Onion Powder to the heat (still on low medium) and stir.




E) I added the Diced Tomatoes and mixed it with the rest

F) Then I added the rest of the seasonings. I added them bit by bit tasting along the way to see if I needed more. Sorry I don't measure things while cooking, its also good to cook this way because you get to make it the way you want. If you like garlic, add loads, if you like less salt, add less. I added some Sea Salt , Brown Sugar, Black Pepper, & Dried Thyme and stirred everything.




G) After adding the seasonings, I let it stay on the fire for a little bit and that was it. To make it look like a sauce I blended it in my magic bullet blender, any blender would work.


Voila Tomato Sauce is done!

3. Heat up the Veggie Sausage Patty. You can heat it up in a microwave but I used my magical tortilla pan (Sheila) that I use a lot. To make things faster if using a pan you can put it in the microwave for a little bit to defrost and then throw it on the pan. Or if you just use the pan to heat it up you have to put it on medium low heat. After I was done heating it up I did break it into little pieces since its a topping


4. Make Scrambled Eggs. I didn't add any seasoning just poured my liquid eggs into Sheila and scrambled it with a spatula.




5. Last but not least. Heat up the Naan. Heat both sides.


That is all the folks now its time to assemble
