Vegetarian Meal #6: Blueberry & Banana Pancake (No Egg, No Oil, Dairy Free)
Hello! It has been a minute since I posted a blog post. It is difficult sometimes because they are some meal ideas I would want to post but my problem is that these meals are also my actual meal so I am usely hungry while making them and sometimes I aint got no patience to take pictures, record, I just want to eat. But I am happy this time around although I was hungry I did take time to show case this meal.
Below is a list of items I used to make this pancake and there is a video at the end showing how I put it all together. This was really easy to make.
1. Pancake Mix 7-Grain with Flax Pancake Mix by Wheat Montana Farms
I actually got this healthy pancake mix from Ross. Yes dress for less Ross. Ross has been a place where I go to get deals on natural brands like burts bees, yes to brand, etc that I love also a chance for me to try something new cause they are less expensive. Nowadays they have healthy food items in their stores. Like really random items and with the price you can't help but pick one up to try.
2. Almond Milk (Almond Breeze Unsweetened Almond Milk)

3. Fruits (Banana, Blueberries, & Strawberries)

Blueberries tend to be expensive but for me right now I have a little abundance of them because of a while ago they were on sale for a dollar a pint at Kroger and I bought a whole bunch and froze them. Yes for me Blueberries are in my top 4 favourite fruits (Mango, Blueberries, Kiwi, Passionfruit) I suppose honourable mention is Banana, because it has so much diverse usage. It is a permanent buy in my groceries the other fruits I love but my budget doesn't allow me to eat them all the time. Blueberries are also high in antoxidants, fiber and other great vitamins that when they are on sale honey you need to pack. I was the only one packing them in my cart, other people were taking one or two, I am like

4. Brown Sugar

5. Oil-Free Spray (Pam Organic Canola Oil Cooking Spray)

I always feel weird about products like this where it says cooking oil spray but it has 0 calories and 0 fat. I always wonder how it is made and I want it to be a mystery so my status on these kinds of spray is #ignorant. But for me, a cooking spray is essential for me. I love oil and fat yes but I want to be able to eat more, I feel when something is fried with oil you have to be careful to eat less and I want to eat more. So I use this a lot to avoid the fat and calories of oil or I use it in addition to oil to reduce how much oil I use.
So that is all the 5 items I used to make this meal. FYI: I don't really measure anything because I like to adjust as I go, this pancake you can't go wrong really especially when you blend the banana and milk separate, you get to control the liquid ratio of the pancake.
