Vegetarian Meal #11: Strawberry Pancake Pie (Sounds Funny but Tastes Yummy)
This may be my last recipe post for a little while because I am going to be travelling and I will be away from my kitchen and I don't know if I will be able to make anything worth bloggable. Okay Back to the Food:
Supplies: Overview
Flour
Sugar and Salt
Optional: Cinnamon, Vanilla Extract
Milk (Vegan: Dairy Free)
Eggs (Vegan: Banana)
Oil/ Butter (Butter is Better) -or- Oil Free Spray
Berries of your choice
Toppings of your choice

Supplies: Detailed
1. Flour: Parade Enriched Flour (Bleached All Purpose)
you can use any flour of your choice. I have coconut flour and rye flour which are "healthier," but I decided to be naughty and go with the white devil itself.
2. Sugar and Salt: Fiesta White Sugar, Pink Himalayan Salt
Any sweetener will do, they are other ones with a lower glycemic index or less processed like brown sugar which I have but I decided to go for another white devil. I was a bit better about my choice of salt. I used the ever minerally blessed salt Pink Himalayan salt but you can use any kind of salt you have.
3. Cinnamon and Vanilla Extract (Optional): Spice Classics Ground Cinnamon, Alcirelli Pure Vanilla Extract
I mean cinnamon is amazing if you have some you should definitely use it. I know cinnamon may seem like a basic spice but it actually has a lot of great health benefits and it is very nutritious so you should try to use it whenever you can especially for things like this where it will fit perfectly
(13 Health Benefits of Cinnamon + Nutrition Facts). Vanilla extract may be something not everyone has but its something you should get it comes in handy many times and not as expensive as you think. I got the one I have for $3.28 @ H.E.B and a little goes a long way.
4. Milk: Friendly Farms Unsweetened Vanilla Almond Milk
unsweetened almond milk is my go-to milk from any brand really. This one is from ALDI but you can use any milk you have or like. If you want to make this vegan, of course, a milk like the one I used is perfect.
5. Eggs: 3 Large Eggs / Banana (Vegan)
The eggs add a great texture and its pancake so you will need eggs! or something that can duplicate its texture for vegans like Banana, Soaked Chia / Flax seeds etc. I have a bunch of eggs and I am going to be travelling soon so trying to get rid of them.
6. Oil/Butter: Ciuti Sunflower and Avocado Oil
Butter will be better but I didn't have any butter so I used the oil I had on hand. I didn't want to go invest in butter since I am travelling so I used the oil I had on hand. For vegans, they are vegan butter and you probably have one and if you don't oil is vegan-friendly. You can also go oil free with an oil-free spray, not as much fun but I ain't mad at you.
7. Fruits: Strawberries and Blueberries
strawberries and blueberries are some of the fruits I had on hand. Any berry you have will work, the more diverse the better. I used mostly strawberries and that is why I decided to add it to the name.
8. Toppings (Optional): HEB Organics Powdered Sugar, Hersey Sugar-Free Chocolate Syrup
I used these toppings mostly for aesthetic reasons, luckily they taste great as well. you can use whatever aesthetic pleasing toppings you have. Or you can go all naturale and skip the toppings.

🍓 Preferably, you will need a Cast Iron Pan for this because the food is going to get finished off in the oven. Personally, I don't have a cast Iron pan but I have used my pan which has plastic handles but really really tough ones I believe because I have used it in the oven a couple of times and it survived so I think a solid pan will be passable.
FYI I bought a wok a long time ago and this whole time I thought this pan was the wok until I found the actual wok and they didn't look identical at all. I was like I need to go sign up for Miss Dumb International Pageant right now because I definitely have a good chance of winning 😂

🍓 Prep time for this isn't that long, as long as you are not trying to take photos of everything like I was. So its best you start Pre-heating the oven before you start getting everything ready at 350
🍓 To make life easier, dump the egg, milk, flour, vanilla extract, cinnamon, salt, and sugar into the blender or you can be extra like me and mix everything by hand before pouring it into the blender. It wasn't a better technique I just forgot that I was going to blend it.
🍓 As I mentioned earlier I mixed everything by hand first this is how that went: Unlike other blog posts I came with some measurements this time but you don't have to follow mine of course.
1. Break the Eggs
(The eggs need to be room temperature, if they are straight from your fridge put them in some warm-hot water for a bit for them to warm up)
2. Beat The Eggs while pouring the Milk (1/2 cup). Milk needs to be lukewarm. Heat it up in the microwave for a little bit if your milk is ice ice baby.
3. I added 1/4 tsp of Vanilla Extract, 1/4 tsp of Salt, and about 1/4 cup of Sugar (I forgot to add the cinnamon here)
4. Then I added 1/2 cup of Flour and as I was whisking it around, I remembered about the blender. Yes, the dangers of cooking while hungry!
5. I dumped my mix in the blender and blended till it was smooth and no lumps.
I chopped up some strawberries earlier before making the batter and now that I had my batter ready we are ready to heat things up!
🍓 Then I added the sliced strawberries and threw in some blueberries, stirred, and added a bit of sugar. Looking back at this point I could have squeezed in a bit of lemon for more tartness. I definitely will be making this again so I will do that next time.
🍓 After the berries got a bit soft, I poured the batter and left it on the stove till the bottom got crisp. As it was on the stove is when I remembered about the Cinnamon which I then went on the sprinkle heavily some on top of the batter. So because of the berries, it will take a longer time than normal for it to crisp up because it is not going to get the best "frying" experience because of the liquid produced from the berries so it will take some time to crisp up.
🍓 After that, I put it in the oven and then it was done. Sorry, I don't know how long for. I was trying to clean up the kitchen as it was in the oven but it didn't take that long maybe I will say 10 min but kept checking on it but so it won't burn.
🍓 and voila! it is done, it was a bit ugly so I immediately topped it with Powdered Sugar, some fresh strawberries and blueberries, and last minuted decided to throw in the sugar-free chocolate syrup.
