Vegetarian Meal #7: Gypsy Bowl Volume I (Easy & Vegan Friendly)

                                

I guess this classifies as a  #Buddhabowl but I want to call it #GypsyBowl if that isn't a thing already. Calling it that because of its eclectic and colourful #Esmeraldavibes. But first of all, what the heck is a Buddha Bowl!?! Well, my friends, there is really no clear definition but it can be described as a dish made up of various greens, raw or roasted veggies, beans and a healthy grain like quinoa or brown rice. So basically a bunch of random healthy things in a bowl. Its meant to promote clean eating and balanced eating. Basically, there is no specific way of doing it and its very flexible, that is why it is a go-to for me because it fits my memo of easy, lazy, affordable, healthy and vegetarian.

I made this bowl with what I had on hand and so it can be customizable to what you have.

Supplies
Base: Quinoa, Red Split Lentils, White Rice
Toppings: Sweet Potatoes, Frozen Spinach, Mushroom
Red + Orange Bell Peppers, & Avocado
Seasonings: Tumeric, Garlic Salt, Bay Leaves, Regular Salt, & Worcestershire Sauce


 1. First for my grain base of  White Quinoa (Great Value $3.92),  Red Split Lentils (Trader Joe's $1.69) , & White Rice (not pictured from Sams Club).
I put all of them in the rice cooker pot and gave it a good rinse. Then I added Powder Tumeric (Sadaf brand sold in HEB $2.46), Garlic Salt (Lawry's), & Bay Leaves.
Then I put it in the rice cooker till it was all done.

*FYI I don't measure so if the rice cooker stops and it isn't cooked all the way to my liking,  I add a little more water and start it again. 


2. Toppings: My toppings include: Sweet Potatoes, Spinach, Mushrooms, Red & Orange Bell Peppers, and Avocado




Sweet Potatoes

- Since the microwave cooks things from the inside, it's a great way to cook potatoes also being a lazy person its great. So I usually put it in the microwave for about 4- 5 mins. After the 4 -5 mins is over, I poke at it to make sure its soft if it is I take it (be careful HOT POTATO!) or leave it in for 1 min.
- After microwave, I put it under cold water and remove the skin which it is a lot easier after it is cooked. The chop it up its ready to serve.



Mushrooms 

- chopped them up. put in heated pan, sauteed with worcestershire sauce 
Spinach 
- For this, I used Oil, Garlic, Onions, & frozen Spinach (its already chopped up and has a good texture)
- Heat pan, pour oil, put garlic, then onions, then spinach and stir them all.
- For taste I added a little Salt 
- this is a good point to add a little heat (fresh red peppers) if you are a muy caliente kind of person. 




Red & Orange Bell Peppers

- Chopped them up. Put in Heated Pan. Sauteed with Worserchestire sauce.

avocado 
- Avocado.
